BEAT eggs in small bowl until blended.
COAT a small fry pan or skillet with nonstick spray or 1/2 Tbsp. butter. HEAT over medium-high heat until hot. ADD tomato, pepper and onion, and SAUTE for 1 minute or until tender.
POUR eggs over mixture in pan. As the eggs begin to set, gently PULL the eggs across the pan to the center with a spatula.
CONTINUE cooking – pulling, lifting and folding eggs – until thickened and no visible liquid remains. STIR in cheddar cheese. REMOVE from heat. SEASON with salt and pepper if desired. SERVE immediately.
Choose your own fillings. Try adding some diced ham, sausage or salmon. Or a combination of avocado, feta cheese and toasted almonds. Or a mix of salsa, chorizo and jalapeño.
