Ground Pork & Egg Fried Rice

Directions

  1. In a large skillet over medium high heat add oil. Once hot, add pork and cook, breaking up into small pieces, until pork is no longer pink and reaches a temperature of 160°F. Add onions and cook until softened, about 2-3 minutes.

  2. Add rice, peas and carrots, soy sauce, oyster sauce, and sesame oil and stir to combine. Cook, stirring occasionally, for 3-5 minutes until rice and vegetables are warmed through.

  3. Push rice mixture to one side of the skillet. Crack eggs into the cleared-out side of the pan and scramble to cook through before mixing into the fried rice. Once all ingredients are fully incorporated remove from heat.

  4. Serve hot garnished with scallions if desired.

  • 1 tbsp vegetable oil
  • 1/2 cup onion, diced
  • 3 cups white rice, cooked
  • 1 1/2 cups peas and carrots, frozen
  • 1/4 cup soy sauce, low sodium
  • 2 tbsp oyster sauce
  • 2 tsp sesame oil
  • 1 tsp garlic powder
  • 2 large eggs
  • 1/4 cup scallions (optional)
  • 1/2 tsp crushed red pepper (optional)

Tips

Ground pork is safe to eat when cooked to 160 degrees.
