  1. Preheat oven to 400° F. Line a baking tray with parchment paper.

  2. Slice bread in half lengthwise then slice those pieces in half. Making 4 pieces. Remove some of the coat to make room for ingredients. Evenly coat the cut sides with butter. Arrange slices on the prepared baking sheet and bake for 10-12 minutes.

  3. While the bread toasts, make fried eggs: Heat oil in frying pan over medium heat. Crack eggs in pan, one at a time and fry to your liking. Set aside and keep warm.

  4. Mash each half of avocado on each bread slice, top with slices of cherry tomatoes, mozzarella cheese each, a fried egg and a basil leaves. Drizzle with balsamic vinegar and serve.

  • 1 tablespoon cooking oil
  • 4 eggs
  • 2 small avocados, halved
  • 4 cherry tomatoes, sliced
  • 2 (2-inch) slices mozzarella cheese
  • 1/3 cup fresh basil leaves
  • 2 tablespoons balsamic vinegar
