  1. In a skillet, brown the chorizo, then drain any excess grease.

  2. Crack 6-8 eggs into a large bowl and whisk. Season with salt and pepper.

  3. In a separate skillet melt 1-2 Tbsp of butter at medium-high heat.

  4. Add eggs to skillet and stir slowly until they become scrambled.

  5. Grate fresh mozzarella cheese into a separate bowl.

  6. To assemble your quesadillas, add a thin layer of mozzarella cheese to 1/2 of a large tortilla.

  7. Next, add a layer of cooked chorizo and chopped green onion. Finally, add another thin layer of cheese.

  8. Fold the tortilla in half and fry in a skillet on medium heat until golden brown.

  9. Flip and repeat on the other side.

  10. Serve with fresh pico de gallo and guacamole!

  • large tortillas
  • green onion
  • pico de gallo
  • guacamole
