These pea fritters are quick to whip up and super versatile. Adults can enjoy them with a poached egg on top, and for the little ones, slice into strips and serve with Greek yogurt dipping sauce.

Directions

  1. Place peas in a microwave safe bowl. Cover with enough water to submerge peas and microwave 1 minute, until tender. Drain water.

  2. Place peas, eggs, flour and baking powder in a blender. Blend until combined.

  3. In a medium skillet, add oil. Once warmed, drop about 1 tablespoon of pea mixture into skillet at a time. Cook 2-3 minutes on each side, until golden.

  4. In a small bowl, combine yogurt, garlic powder, onion powder and thyme.

  5. Serve pea fritters with Greek yogurt mixture. For adults, top fritters with a poached egg, if desired.

  6. Refrigerate leftovers up to 3 days.

  • 4 cups frozen peas
  • 4 large eggs
  • 1 1/4 cup all-purpose flour or whole wheat flour
  • 1 tsp. baking powder
  • 3 Tbsp. avocado oil or coconut oil
  • 1 cup 2% plain Greek yogurt
  • ¼ tsp garlic powder
  • ¼ tsp. onion powder
  • 1 tsp. dried thyme
  • Poached eggs, for adults, if desired
