Green Chile Egg Salad Sliders

Directions

  1. PLACE eggs, celery, green chiles, red onion, mustard and mayonnaise in a large bowl. SEASON with salt and pepper, and gently STIR until well incorporated. FILL each slider bun with 1/2 cup egg salad. SERVE.

Ingredients

  • 6 large EGGS, hard-boiled, peeled and chopped
  • 2 celery stalks, finely chopped (1/2 cup)
  • 1 can diced green chiles (4 oz.)
  • 1/4 cup red onion, finely chopped
  • 1 Tbsp. Dijon mustard
  • 1 Tbsp. mayonnaise
  • 1 tsp. salt
  • 1 tsp. black pepper
  • 6 slider buns

Tips

For a speedy dinner, use sweet Hawaiian rolls. Don’t separate when removed from package. Lay flat on a platter, spread egg mixture across and place top layer of rolls. Pass around and have everyone pull apart.
