Directions
Mix ground chicken, eggs, garlic powder, breadcrumbs, and ricotta.
Form mixture into balls, stuffing each with a mozzarella cube.
Add to an oven safe skillet and bake meatballs on 350 for 30-40 minutes or until cooked through.
Top with Parmesan, olive oil, and cracked black pepper.
Serve and enjoy!

- 2 eggs
- 1 Tbsp garlic powder
- 1 cup breadcrumbs of choice
- ¼ cup ricotta cheese (or dairy free substitute)
- 1 block mozzarella cheese (or dairy free substitute), cubed
- ½ cup parmesan (or dairy free substitute)
- 2 Tbsp olive oil for drizzling
