  1. Preheat oven to 350° F.

  2. To a large mixing bowl add sugar, flour and melted butter.

  3. Add in three cracked eggs and whisk with a hand mixer.

  4. Add in the evaporated milk and vanilla extract, whisking to combine.

  5. Fold in 1 cup of shredded coconut

  6. Pour mixture into a premade pie crust. Sprinkle remaining ½ cup of shredded coconut on top.

  7. Bake for 45 minutes or until golden brown. Serve warm.


  • 1 cup granulated sugar
  • 1 Tbsp flour
  • 1 stick butter, melted
  • 3 large eggs
  • 1 cup evaporated milk
  • 1 Tbsp vanilla extract
  • 1 1/2 cups shredded coconut
  • 1 9-inch pie crust
