Directions
Dice the bell pepper.
Finely chop the green onions and greens.
Crack eggs into a bowl.
Mix all ingredients in a large bowl, then add the eggs. Stir to combine.
Spray muffin tins with oil and pour mixture into muffin tins.
Bake at 350° in the oven in a water bath for 22-25 minutes.

- 1/4 cup greens (like spinach and kale), finely chopped
- 8 large eggs
- 1/4 cup milk
- 1/2 cup cottage cheese
- 1/4 cup shredded white cheddar cheese
- 1/4 cup shredded Monterey jack cheese
- 2 Tbsp shredded Parmesan cheese
- salt & pepper to taste
