Fry the egg in a pan on medium-high heat, set to the side.
Spread a thin layer of mayonnaise on the outside of 2 slices of bread.
Assemble your sandwich making sure to put a piece of cheese on first and last so everything melts together well. Add your fried egg and any add-ins between the cheese.
Put the sandwich in the same pan you cooked your egg in and let cook for 1-2 minutes on each side until the middle is melty and the outsides are crispy. Remove and enjoy!
