Why limit your waffle iron to traditional waffles? Think outside the batter and whip up some savory chaffles (cheese/egg waffles) and top with your choice of veggies for added nutrition and color. Try cherry tomatoes, fresh spinach, arugula, avocado slices or your favorite roasted squash.
Directions
Turn a 7” waffle iron on and spray with non-stick cooking spray.
In a medium bowl, whisk egg, cheese, flour, garlic powder, oregano, parsley and salt. Spoon the batter into waffle iron and cook 5 minutes, until golden.
Top with additional mozzarella cheese, if desired, and your favorite vegetable toppings. Serve.
