  1. Separate out the egg yolks and beat them in a large bowl.

  2. Transfer your beaten egg bowls into a bowl with condensed milk, evaporated milk, vanilla, and a dash of cinnamon and mix well.

  3. Add sugar into the flan mold and heat over the stovetop on low until the sugar turns to liquid and has a light brown caramel color.

  4. Spread the liquid sugar (caramel) evenly on the pan.

  5. After the pan cools a bit, pour the egg yolk and milk mixture into the pan until it’s halfway full.

  6. Put the pan into the water bath

  7. Bake in a water bath 350⁰F for 30 minutes or until the toothpick comes out clean.

  8. *Double the recipe if you want to make 2 layers

  9. Cool and top with lady fingers dipped in chai.

  10. Cover with plastic and let set overnight.

  • 1/2 cup granulated sugar
  • 6 ladyfingers (more or less depending on pan size)
  • 2 cups chai tea
