Preheat oven to 400ºF and line a large baking sheet with parchment paper. Cut holes in bagels up to 2 inches using a round cookie cutter. Place bagels onto baking sheet with seasoned side facing up. Spray bagels with olive oil cooking spray.
Fold each slice of prosciutto and lay over holes of bagels. Press into holes to create a well for eggs. Crack eggs into wells, place in oven and bake for 10-12 minutes, until egg whites are fully cooked.
Serve hot topped with sliced avocado and chives.

To ensure food safety, eggs should be cooked until both the yolk and the white are firm. Consuming raw or undercooked eggs may increase your risk of foodborne illness, especially for those with certain medical conditions. For recipes that call for eggs that are raw or undercooked when the dish is served, use either pasteurized shell eggs that have been treated to destroy Salmonella, or use pasteurized egg products.
