Have you tried kimchi? Kimchi is a fermented (hello probiotics!) vegetable (usually cabbage and radish) side dish commonly used in Korean cooking. Use kimchi to add flavor to soups, stews, noodles, fried rice, savory pancakes and more. This recipe uses kimchi to flavor plain ramen noodles. The soft-boiled egg serves as an extra sauce: simply mix the runny yolk into the ramen to create a creamy texture. Plus, feel free to add your favorite greens and protein.

Directions

  1. Cook ramen (minus the seasoning packet) according to packet instructions. Drain.

  2. Stir the chopped kimchi and juice, plus avocado oil into the ramen until well-combined.

  3. Cook frozen wontons according to packet instructions.

  4. Serve the spiced ramen with cooked wontons, steamed greens, and a soft-boiled egg.

Ingredients

  • 1 packet Instant ramen (omit the seasoning packet)
  • 1/3 cup Kimchi, chopped (plus 1 Tablespoon kimchi juice)
  • 2 tsp Avocado oil
  • 1 large egg, soft-boiled
  • 1/2 cup Steamed bok choy (or preferred greens)
  • 4 Frozen shrimp and vegetable wontons
