  1. Preheat oven to 350°F

  2. In a small pot over medium heat, add the sugar and water and melt until the sugar has dissolved. Then lower the heat and continue to cook until the sugar is a golden caramel color.

  3. Pour the caramel in molds and set aside to cool.

  4. In a large bowl, carefully whisk the egg yolks with the condensed milk and ube extract. Slowly pour in the evaporated milk till combined.

  5. Pour the mixture through a fine-mesh sieve until each mold is full, leaving half of an inch at the top.

  6. Put flan mold into baking dish and fill dish with water until 3/4 full. Bake for 45-50 minutes.

  7. Take molds out of baking dish and set aside to cool before serving.

Ingredients

  • 3/4 cup granulated sugar
  • 2 Tbsp water
  • 10 egg yolks
  • 1 can condensed milk (14 oz)
  • 1 Tbsp ube extract
  • 1 can evaporated milk (12 oz)
