Ingredients and Directions
Preheat oven to 350°F
In a small pot over medium heat, add the sugar and water and melt until the sugar has dissolved. Then lower the heat and continue to cook until the sugar is a golden caramel color.
Pour the caramel in molds and set aside to cool.
In a large bowl, carefully whisk the egg yolks with the condensed milk and ube extract. Slowly pour in the evaporated milk till combined.
Pour the mixture through a fine-mesh sieve until each mold is full, leaving half of an inch at the top.
Put flan mold into baking dish and fill dish with water until 3/4 full. Bake for 45-50 minutes.
Take molds out of baking dish and set aside to cool before serving.
- 3/4 cup granulated sugar
- 2 Tbsp water
- 10 egg yolks
- 1 can condensed milk (14 oz)
- 1 Tbsp ube extract
- 1 can evaporated milk (12 oz)
