Why limit your waffle iron to traditional waffles? Think outside the batter and whip up some savory chaffles (cheese/egg waffles) and top with your choice of veggies for added nutrition and color. Try cherry tomatoes, fresh spinach, arugula, avocado slices or your favorite roasted squash.

Directions

  1. Turn a 7” waffle iron on and spray with non-stick cooking spray.

  2. In a medium bowl, whisk egg, cheese, flour, garlic powder, oregano, parsley and salt. Spoon the batter into waffle iron and cook 5 minutes, until golden.

  3. Top with additional mozzarella cheese, if desired, and your favorite vegetable toppings. Serve.

Ingredients

  • 1 large egg
  • ½ cup mozzarella cheese, shredded plus more to serve, if desired
  • 2 Tbsp almond flour
  • ½ tsp garlic powder
  • ½ tsp dried oregano
  • ½ tsp dried parsley
  • 1/8 tsp salt
