One Pan Meal: Sausage, Egg and Cheese Roll Up

  1. Set a sauté pan on the stove and set to medium (or as directed on the sausage package). In a bowl, beat the eggs then add in the chives, salt and pepper until combined. Set aside.

  2. Cook the breakfast sausage links in the pan as the package directs then remove and set aside.

  3. Add a tablespoon of butter to the pan, when melted add in half the egg mixture. Swirl it around the pan and let the eggs cook for 3-5 minutes or until they are no longer runny. Add the cheese then tortilla to the top, then flip it over. Cook for another few seconds to heat the tortilla and melt the cheese. Flip it over onto a cutting board and roll it around 2 sausage links lengthwise. Repeat instructions using the remaining egg mixture to make second serving.

  • 1/2 cup grated cheddar cheese
  • 2 flour tortillas
  • 1/4 cup chopped chives
