Set a sauté pan on the stove and set to medium (or as directed on the sausage package). In a bowl, beat the eggs then add in the chives, salt and pepper until combined. Set aside.
Cook the breakfast sausage links in the pan as the package directs then remove and set aside.
Add a tablespoon of butter to the pan, when melted add in half the egg mixture. Swirl it around the pan and let the eggs cook for 3-5 minutes or until they are no longer runny. Add the cheese then tortilla to the top, then flip it over. Cook for another few seconds to heat the tortilla and melt the cheese. Flip it over onto a cutting board and roll it around 2 sausage links lengthwise. Repeat instructions using the remaining egg mixture to make second serving.
Note: To ensure food safety, eggs should be cooked until a thermometer inserted in the center reaches 160°F
To ensure food safety, eggs should be cooked until both the yolk and the white are firm. Consuming raw or undercooked eggs may increase your risk of foodborne illness, especially for those with certain medical conditions. For recipes that call for eggs that are raw or undercooked when the dish is served, use either pasteurized shell eggs that have been treated to destroy Salmonella, or use pasteurized egg products.
