  1. In a pan, sauté the diced peppers, diced onions, and diced ham (if unsliced). Prepare the eggs by whisking them in a bowl. Next, add in the sauté mixture and cheese to create the egg mixture. Season with salt and pepper. Slice the top off the peppers. Use a spoon to scoop the inside seeds and stems out. Lay a slice of ham in each of the peppers (if not already diced) then fill the peppers with the egg mixture. Place in an air fryer at 400 degrees F for 8 minutes or in an oven at the same temperature for 10 minutes. Garnish with chopped chives, if desired.

  • 3 bell peppers - 2 whole and 1 finely diced
  • pinch salt and pepper
  • 2-3 sliced of ham, either chopped or left as slices
