In a pan, sauté the diced peppers, diced onions, and diced ham (if unsliced). Prepare the eggs by whisking them in a bowl. Next, add in the sauté mixture and cheese to create the egg mixture. Season with salt and pepper. Slice the top off the peppers. Use a spoon to scoop the inside seeds and stems out. Lay a slice of ham in each of the peppers (if not already diced) then fill the peppers with the egg mixture. Place in an air fryer at 400 degrees F for 8 minutes or in an oven at the same temperature for 10 minutes. Garnish with chopped chives, if desired.
Note: To ensure food safety, eggs should be cooked until a thermometer inserted in the center reaches 160°F
To ensure food safety, eggs should be cooked until both the yolk and the white are firm. Consuming raw or undercooked eggs may increase your risk of foodborne illness, especially for those with certain medical conditions. For recipes that call for eggs that are raw or undercooked when the dish is served, use either pasteurized shell eggs that have been treated to destroy Salmonella, or use pasteurized egg products.
